What is a Fiddlehead?
The fiddlehead resembles the curled ornamentation — called a scroll — on the end of a stringed instrument, such as a fiddle. Fiddleheads burst through the soil in early spring and are harvested as a vegetable rich in fiber, vitamin C, vitamin A, and omega-3 fatty acids. They are a delicacy throughout the Northeast and Canadian Maritime Provinces.
